This is another standby for our family. I often prepare it as a meal for new moms - just include a loaf of garlic bread and a bag of salad. You can use mild (sweet) sausage, too, but it does lose some of its punch.
Baked Pasta with Spinach and Tomatoes
3/4 lb hot Italian sausage (remove casings if desired, or you can brown it and cut it into coins)
medium onion, chopped
3 large garlic cloves, minced
Saute ingredients untiil sausage is browned, then stir in:
1 28 oz can crushed tomatoes
I envelope pesto (prepared according to package directions)
Simmer for a few minutes, then pour over:
16 oz cooked pasta (I like to use bow ties, but penne is good, too. Leave them slightly crunchy as this will be going in the oven)
10 oz bag fresh spinach, de-stemmed and torn into bite-size pieces
8 oz mozzarella, cubed
Mix together, and place in 9x13 baking pan. Sprinkle with grated parmesan cheese, then bake at 375 for approx 30 minutes, until thoroughly heated
