Chocolate Sandwich Cookies
from child (magazine), September 2006

Makes: 20 cookies
Prep time: 15 minutes, plus 1/2 hour to chill
Cooking time: 5 to 8 minutes per batch

INGREDIENTS
1 cup butter (2 sticks)
1 cup granulated sugar
1 egg
1 cup cocoa powder
1 cup plus 3 Tbs. all-purpose flour
3 Tbs. water

DIRECTIONS
1. Cream butter and sugar until fluffy. Add egg and mix together. Gradually mix in cocoa powder and flour. Stir in water.
2. Form dough into a flattened disk: chill for 30 minutes.
3. Preheat oven to 325 degrees (F). Carefully place dough on parchment paper; roll out to approximately 1/4" thick. Cut into circles using a 1 1/4" round cookie cutter. Place on cookie sheets. Bake about 5 to 8 minutes, until the cookies are firm at the edges and no longer doughy in the middle. Cool completely. Spread cream cheese frosting (see recipe below) on the cokkie bottoms; assemble to form a sandwich cookie.

Cream Cheese Frosting
In a bowl, combine 1/4 cup low-fat cream cheese, 1 1/3 cup powdered sugar, and 6 Tbs. softened butter. Mix well.

Each sandwich cookie (including frosting):
229 calories, 2g protein, 2g carbohydrates, 2g fiber, 14g fat (9g saturated), 47mg cholesterol, 1mg iron, 15mg calcium, 15mg sodium. (To reduce the amount of calories in each, make mini cookies using a 3/4" cokkie cutter or skip the cream cheese frosting.)

Overall rating of recipe:4 of 5

The recipe made it sound easier to make than it really was. (Perhaps it was because I didn't have parchment paper or a cookie cutter.) However, even after chilling, the dough got really gooey fast, making it difficult to handle.

I eventually ended up using a Tablespoon measurer and rolling the dough into a ball and flattening it up on the cookie sheet. The cookie was bigger than what the recipe called for and I only ended up with 13 sandwich cookies.

As far as how the cookie tastes, it actually reminded me of a gourmet cookie, one that you would save for a special occasion. I even thought it would be a great wedding present! Well, it would be a good Christmas present. The cookie just melts in your mouth and the cookie really complements the filling well. It is very rich and 1 sandwich cookie is enough for your dessert serving. So, even if I only yielded 13 sandwich cookies, I still have a handful left, which should last a few more days.

Therefore, though the cookie was on the tedious and difficult side to make, the delectable taste of it overrides the making process Laughing
