This is truly one of my all-time favorite cakes. Easy to make, no expensive ingredients, plus it's actually pretty healthy. Not to mention that anytime I serve it to guests they request the recipe. If you really want to wow 'em, add some vanilla ice cream.
Mocha Pudding Cake
(from Cooking Light’s 5 Star Recipes)
1 c flour
2 tsp baking powder
1/4 tsp salt
1 1/2 Tb instant coffee granules
1/4 c + 2 Tb unsweetened cocoa powder, divided
3 Tb oil
1 tsp vanilla
1 c boiling water
1/2 c milk
1 c sugar, divided
Combine flour, baking powder, salt, 2/3 c sugar, 1/4 c cocoa and coffee granules in large bowl. Combine milk, oil and vanilla, then add to dry ingredients, stirring well. Spoon batter into greased 8 inch pan. Combine remaining 1/3 c sugar and 2 Tb cocoa and sprinkle over batter. Pour boiling water over batter, but do not stir. Bake at 350 for 30 minutes.
